Cheese & Bacon Potato Parcels

Serves:

8-10 parcels

Ingredients

750g baby potatoes

8-10 rice paper sheets

6-8 vegan bacon rashers

2-4 vegan cheese slices

Half a leek

Olive oil

Vegetable oil

Sea salt

Method

1] Parboil potatoes until tender

2] Transfer onto baking tray & crush with the base of a glass

3] Season with salt & drizzle with olive oil

4] Roast for 30-35 mins until crispy

5] Cut leeks into half inch coins, sautè with olive oil for 5-6 mins on each side

6] Fry bacon according to instructions

7] Slice cheese into small squares

8] Place prepared leeks, cheese & bacon on a tray ready to assemble

9] Remove potatoes from oven, if you leave to cool the next step will be easier

10] Pile each potato with a cheese square & leek coin, wrap or top with a bacon rasher

11] Submerge rice paper into hot water for a minute until softened

12] Lay rice paper onto a plate, place potato stack into the centre, wrap each side until a parcel forms. Repeat the process

13] Fry in hot vegetable oil for 6-7 minutes per side until crispy

14] Serve with bbq sauce
