Ingredients
CHOCOLATE
300g dark vegan chocolate
140ml coconut milk
CARAMEL
150g soft light brown sugar
130g unsalted vegan butter
90ml vegan double cream
FILLING
120g crushed vegan cookies & cream biscuits
Method
1] Melt butter in a saucepan, add sugar & stir well on medium heat
2] When sugar has dissolved, add cream, stir frequently for 4-5 minutes
4] Leave to cool & allow caramel to thicken
5] Melt chocolate
6] Add coconut milk, whisk until smooth
7] Pour into mould in following order: melted chocolate, oreos chunks, caramel, more chocolate
8] Top with leftover crumbled oreos or leave plain
9] Freeze for 1 hour minimum, pop out of moulds & keep frozen until serving
