Smoky Tofu & Black Bean Tacos

6-8 tacos

Ingredients

TOFU

200g extra firm tofu

2 tablespoons fajita seasoning


BEANS

4 tablespoons passata

4 garlic cloves

2 tins black beans

1 tablespoon chipotle paste

1 tablespoon tomato puree


GUAC

Avocado

Spring onion

Gherkins

Coriander

Sea salt


EXTRAS

8 soft tortillas

Grated vegan cheese

Vegan pesto

Crunchy lettuce

Olive oil

Method

1] Grate tofu onto baking tray, sprinkle with fajita mix & oil, combine well. Bake for 12-14 minutes at 180c

2] Drain beans, add to saucepan along with crushed garlic, chipotle & both tomato components

3] Cook for 8-10 minutes, add half a cup of water if needed to loosen

4] Create guacamole with crushed avocado, salt, sliced onions, diced gherkins & chopped coriander

5] Assemble tacos with guacamole, chopped lettuce, cheese, pesto, beans & tofu. Fold in half and press down

6] Crisp up with a drizzle of olive oil on both sides for a couple of minutes until crunchy & enjoy!
