Ingredients
2.5kg maris piper potatoesÂ
8 garlic clovesÂ
Bunch of flat leaf parsleyÂ
Rapeseed oil
Flaky sea salt
Method
1] Peel & chop potatoes into large chunks, leave small ones whole
2] Boil for 10-12 mins or until the edges begin to flake but the potato remains whole
3] Pour a generous glug of oil into your baking tray & preheat at 200c for 10 minutes
4] Drain potatoes & carefully transfer into hot oiled tray
5] Season generously with salt, toss to coat the potatoes
6] Roast for 30 minutes at 200c
7] Add finely minced garlic & chopped parsley, toss to coat evenly
8] Place back into oven for further 20 minutes or until crispy & golden
