Pickled Onions

Time:

20 minutes

Serves:

1 jar

Ingredients

2 large onions

50/50 water & rice wine vinegar [enough to fill your jar]

1 tablespoon coriander seeds

1 tablespoon mustard seeds

1 tablespoon caster sugar

Handful of black peppercorns

Pinch of sea salt

Method

1] Thinly slice onions & add to an empty jar

2] Add remaining ingredients to a saucepan & heat for a few minutes until sugar has dissolved

3] Allow to cool slightly before pouring over onions, seal the jar & store in the fridge
