Sweet Potato Layercake

Ingredients

1 medium sweet potato

400g chestnut mushrooms

280g vegan chorizo or sausages

Flat leaf parsley

Olive oil

Sea salt

Cracked black pepper

Avocado

Method

1] Peel sweet potato & use a mandoline to slice thinly

2] Drizzle nonstick frying pan with olive oil & arrange potato rounds to create a layered cake

3] Fry on medium heat for 6-7 minutes with something heavy on top to condense the layers

4] Place plate over the top, flip the pan to reveal the other side. Carefully shuffle back onto the frying pan & cook the other side until it’s tender to prick with a fork

5] In the meantime, sautè chopped mushrooms & crumbled chorizo in a frying pan for 12-15 minutes

6] Assemble potato cake with crushed avocado, chopped parsley, veg mix & salt & pepper
