Toasted Coconut & Marshmallow Cookies

6-8 cookies

Ingredients

150g plain flour

85g unsalted vegan butter

80g soft light brown sugar

50g white sugar

50g vegan marshmallows plus topping

50ml vanilla oat milk

30g desiccated coconut plus topping

Lots of rainbow sprinkles

Method

1] Cream together sugars, milk & butter using an electric whisk

2] Toast coconut on a dry frying pan for 1-2 minutes until slightly golden

3] Fold plain flour & coconut into the mix until fully combined

4] Add mini/chopped marshmallows & sprinkles, mix

5] Form mini cookie dough balls onto lined baking tray with space either side for cookies to spread

6] Top with more marshmallows & coconut

7] Bake for 10-12 minutes at 180c remove from oven to cool & firm up
